Breakfast Egg Bites

Ingredients:

  • 10 omega-3 eggs, whisked 

  • 1 tablespoon extra virgin olive oil 

  • 10 cherry tomatoes, halved

  • 6 green onions, finely diced 

  • 1 red bell pepper, diced 

  • 1 cup spinach, cooked, drained and chopped 

  • 1 cup bacon or sausage, chopped

  • ½ teaspoon cumin 

  • Sea salt and black pepper to taste 

  • ½ jalapeño, minced (optional) 

  • ¼ cup cilantro, minced 

Instructions:

  1. Preheat oven to 350°F.

  2. Keep whisked eggs in a bowl at room temperature.

  3. Add tomatoes, onions, bell pepper, spinach, and meat to egg mixture.

  4. Rub a little coconut or olive oil in a glass 9 by 11 baking pan. Pour egg mixture into pan.

  5. Bake eggs for 10-15 minutes or until lightly browned on top and spring back when touched. Garnish with some avocado and serve with berries.

Servings: 4 | Cook Time: 15 minutes | Total Time: 25 minutes
