HOMEMADE QUESO

Ingredients:

2 tablespoons butter

½ white onion, finely chopped

2 cloves garlic, finely chopped

2 jalapenos, deseeded and finely chopped

1 tablespoon flour

¾ cup half and half

1 ½ cup milk (2% or Whole)

8 ounces cheddar cheese, shredded (do not buy pre-shredded)

8 ounces (1 box) cream cheese

1 teaspoon cayenne pepper

1 teaspoon pepper

½ teaspoon salt (or to taste)

Instructions:

In a medium saucepan, melt butter over medium heat. Add onions, garlic, and jalapenos. Sauté until they are soft and start to turn brown, about 5 minutes. Reduce heat to medium-low. Sprinkle flour over the mixture and stir to combine and a film will start to form on the bottom. Add the half and half and stir until the mixture become thick. Add the milk and continue to stir until it becomes thick. This might take a little bit of time, be patient and do not rush this.

When the mixture becomes thick, first add the cream cheese, half at a time. Stir until it in incorporated. Add the cheddar cheese a handful at a time and keep stirring until the mixture is thick and homogeneous. If it starts boiling, remove from heat and keep adding cheese until it cools down a bit.

When all the cheese is combined, immediately remove from heat and add your spices to taste.

Serve on nachos, tacos, burritos, or just with chips!
