Super Greens Pesto
Make it.
2 cups fresh basil leaves
2 cups frozen, defrosted spinach
1 cup kale, blanched and stems removed
1/2 cup olive oil (or more if you want it thinner)
3 garlic cloves
3 green onions, roughly chopped
1/4 - 1/2 teaspoon salt
pinch of black pepper
pinch of red pepper flakes (optional)
1 tsp lemon juice
In a high powered blender or food processor, pulse basil, kale, garlic, and green onions about 5 - 10 times until combined. Add spinach and pulse another 5 times (until combined). Stream in olive oil a little bit at a time. Add salt, pepper, and lemon juice.
Serve on anything you want.
Perfect for the Fall harvest time, if you grow basil. You can put this pretty much on anything: chicken, beef, pork, seafood, tofu, salad dressing, vegetables…
It makes a pretty thick pesto, so it works best in a high powered blender like a Vitamix or Nutribullet. I think a food processor would work as well, but I have not tried that.
